This early summer salad is a staple in our home! This time of year, when everyone is excited for nice weather, we get invited to cookout after cookout. The strawberries this time of year are delicious and we find a way to add them to everything! The best thing about this salad? It is super easy and can be mixed up in a hurry! You can even try adding different types of nuts or cheese to change things up.
Salad:
12 oz of baby spinach
1/2 cup candied walnuts or pecans
16 oz of strawberries (sliced)
1/2 a red onion, thinly sliced
1/2 cup of crumbled feta

4 cups of cooked, cooled whole wheat pasta
Dressing:
1/4 cup balsamic vinegar
1/2 cup olive oil
2 TBS honey
2 TBS dijon mustard
salt and pepper to taste

Combine all the salad ingredients in a large bowl. Add all the dressing ingredients to a mason jar, shake vigorously to combine. Drizzle dressing over salad. You can also use a small bowl and whisk to make the dressing. Serve immediately to avoid soggy greens.
